New application to approve thermolysin as processing aid

The Food Standards Australia and New Zealand (FSANZ) has published the application number A1288 for the use of thermolysin from Anoxybacillus caldiproteolyticus Rokko as a processing aid.

According to the notice, the thermolysin is used as processing aid for protein hydrolysis to process dairy foods, egg, meat and fish, protein concentrates and isolates, yeast and in brewing.
