New standards of identity and quality for dairy beverages

The Ministry of Agriculture and Livestock (MAPA in Portuguese) has published for public consultation the ORDINANCE SDA/MAP N° 857, establishing the standards of identity and quality for dairy beverages.
According to the Ordinance, the dairy base shall represent at least 51% (fifty-one percent) m/m (mass/mass) of the ingredients of the product, which can have as optional ingredients, alone or combined:
I. Dairy ingredients
- Casein and caseinates;
- Milk protein concentrate;
- Whey protein concentrate;
- Sour cream;
- Anhydrous milk fat or butter oil;
- Milk fat for industrial use;
- Buttermilk;
- Butter;
- Milk permeate;
- Buttermilk permeate;
- Whey.
II. Non-dairy ingredients:
- Sugars;
- Starches or modified starches;
- Alcoholic beverages, within the limits established, so as not to configure alcoholic beverages;
- Coffee;
- Chocolate and other cocoa derivatives;
- Condiments and spices;
- Gelatin;
- Maltodextrin;
- Honey; j - fruit, cereal, vegetable, honey and fiber products;
- Fruit products, cereals, vegetables, honey and dietary fiber.
