New standards of identity and quality for dairy beverages

The Ministry of Agriculture and Livestock (MAPA in Portuguese) has published for public consultation the ORDINANCE SDA/MAP N° 857, establishing the standards of identity and quality for dairy beverages.

According to the Ordinance, the dairy base shall represent at least 51% (fifty-one percent) m/m (mass/mass) of the ingredients of the product, which can have as optional ingredients, alone or combined:

I. Dairy ingredients

  • Casein and caseinates;
  • Milk protein concentrate;
  • Whey protein concentrate;
  • Sour cream;
  • Anhydrous milk fat or butter oil;
  • Milk fat for industrial use;
  • Buttermilk;
  • Butter;
  • Milk permeate;
  • Buttermilk permeate;
  • Whey.

II. Non-dairy ingredients:

  • Sugars;
  • Starches or modified starches;
  • Alcoholic beverages, within the limits established, so as not to configure alcoholic beverages;
  • Coffee;
  • Chocolate and other cocoa derivatives;
  • Condiments and spices;
  • Gelatin;
  • Maltodextrin;
  • Honey; j - fruit, cereal, vegetable, honey and fiber products;
  • Fruit products, cereals, vegetables, honey and dietary fiber.
