The use of potassium aluminum sulphate as a food additive is authorized

Health Canada's Food Directorate completed a premarket safety assessment of a food additive submission seeking approval for the use of potassium aluminum sulphate in salted jellyfish.

Potassium aluminum sulphate is already permitted for use as a firming agent in unstandardized foods, pickles and relishes, and sea urchin roe. The results of the premarket assessment support the safety of potassium aluminum sulphate for its requested use in salted jellyfish. Consequently, Health Canada has enabled the use of potassium aluminum sulphate described in the information document below by modifying the List of Permitted Firming Agents, effective May 20, 2021
