FSANZ proposes approval of new enzyme as a food processing aid

The Food Standards Agency of Australia and New Zealand (FSANZ) has published Notice 342-25, which contains application A1288 for the use of an enzyme (protease) extracted from Anoxybacillus caldiproteolyticus Rokko (Rokko Bacillus Thermolysin) as an adjuvant in food processing. This enzyme would be used in protein hydrolysis processes of dairy products, eggs, meat, fish, yeast, protein concentrates and isolates, as well as in beer brewing, among others.
