The FDA is considering the use of soy leghemoglobin as a color additive

The Food and Drug Administration (FDA) has published document No. 2025-04034, proposing an amendment to color additive regulations to expand the permitted uses of soy leghemoglobin as a color additive in ground beef analogue products (e.g. veggie burgers). The FDA is taking this action in response to a color additive petition (CAP) submitted by Impossible Foods, Inc.

Based on the data and information in the petition and other available relevant information, FDA concluded that the petitioned use of soy leghemoglobin as a color additive in ground beef analogue products is safe, provided the amount of soy leghemoglobin protein does not exceed 0.8 percent by weight of the uncooked product.
