Use of hydrolyzed chicken egg white hydrolysate as a raw food material

The Ministry of Health and Welfare published a draft "Restrictions on Use and Labeling Regulations for Hen Egg White Lysozyme Hydrolysate (Hen Egg White Lysozyme Hydrolysate) as a Food Raw Material" in order to effectively and reasonably manage non-traditional food raw materials and ensure consumer safety. The egg white lysozyme hydrolyzed protein regulated in this draft uses egg white lysozyme (Lysozyme) as starting material, after hydrolysis by subtilisin protease (subtilisin protease) of Bacillus licheniformis (Bacillus licheniformis), and then the obtained product is subjected to filtration and drying.
