New enzyme as a processing aid

 

Food Standards Australia New Zealand (FSANZ) has assessed an application  to permit the use of the enzyme alpha-amylase (EC 3.2.1.1) as a processing aid in the manufacture of bakery products such as bread, steamed bread, bread buns, tortillas, cakes, pancakes, and waffles. FSANZ has prepared a draft food regulatory measure. Pursuant to section 31 of the Food Standards Australia New Zealand Act 1991 (FSANZ Act), FSANZ now calls for submissions to assist consideration of the draft food regulatory measure.
