FSANZ calls for submissions on Lentinula edodes mycelia as a processing aid

Food Standards Australia New Zealand (FSANZ) has assessed the application “A1279 – Lentinula edodes (Shiitake mushroom) mycelia as a processing aid”. The application seeks to amend the Australia New Zealand Food Standards Code to to permit Lentinula edodes mycelia for use as a processing aid in the fermentation of pea and rice protein to produce a protein ingredient to be added to various foods.
