Canada approves chitosan as a preservative

Health Canada has authorized the use of chitosan derived from white button mushrooms as a preservative in various foods.
Published on May 30, 2024, this modification allows chitosan at levels ranging from 150 to 1,500 parts per million. The decision follows an assessment confirming chitosan’s efficacy and safety. Producers and importers can now use chitosan in products such as beverages, cheese, desserts, and sauces. Enforcement will be managed by the Canadian Food Inspection Agency.
